Elderberry Syrup
Many people take this every day to ward colds, or lessen their duration

- 1 cup Dried Elderberries See note about sourcing
- 1 cup Water
- ½ cup Honey
- ¼ teaspoon Dried Cinnamon
Combine Ingredients in a small pot.
On medium heat, bring to just boiling.
Reduce heat and simmer for 20 - 25 minutes until sauce has thickened and berries have burst.
Remove from heat and strain the mixture through a fine mesh strainer.
Press the berries with a saucer or small cup to release as much fluid as possible.
Throw away the leftover berries mixture, retaining the syrup.
Store the syrup in a closed jar in the refrigerator.
Take one tablespoon 1 tablespoon a day in water, or tea, as a preventative.
At the onset of cold symptoms you may take 1 tablespoon 3 times a day.
