Herb Butter For Roasted Chicken

Mixing herbs with butter to put on chicken before roasting prevents bland chicken and improves the flavor of the chicken.

Ingredients
  

  • 1 stick unsalted butter if using salted butter, omit the salt in the recipe.
  • 1 teas extra Virgin Olive oil
  • 1 4 -5 lb. Chicken Or separate pieces of chicken, with skin attached.
  • 1 teas Pink Himalayan Salt or Kosher salt
  • 1 garlic clove, minced
  • 1/2 teas fresh ground pepper
  • 1 tab fresh chopped rosemary
  • 1 tab fresh chopped sage
  • 1 tab fresh chopped thyme

Equipment

  • 1 Roasting Pan Big enough for whole chicken.

Method
 

  1. Allow the butter to soften and add in the garlic, oil, and herbs.
  2. Pat chicken skin dry with a paper towel.
  3. Spread the softened butter mixture all over the chicken (or pieces).
  4. Roast your chicken as you normally would.
  5. Refrigerate any remaining butter rub in a sealed container, in refrigerator.

Notes

I have made this with dried herbs, but you must use the following formular:
1 teas of dried herb = 1 tab of fresh herb.
If using table salt, use half as much. Pink Himalayan and Kosher salt have less sodium.
